I don’t really understand why the ingredients are listed after the method, either, as it’s a bit weird tbh. This delicious, vibrant Caribbean-influenced cookbook from the bestselling duo behind Original Flava includes over 100 easy recipes. Presented with mouthwatering pictures and engaging text that makes you want to cook, the recipes are easy to follow and written in an engaging way that isn't gimmicky.

That one detail is what truly keeps this from being a favourite for me simply because I’m not sure how feasible some of these recipes would be. There are many recipes of greedy interest: Plantain Hummus; Caribbean-Spiced Jackfruit Wraps with Plum Sauce; Corn Fritters; Tomato and Coconut Pasta; a tremendous Curry Tofu and Vegetables, which I nearly selected to run here; Cauliflower Burger with Spicy Mayo, Slaw and Mango Chutney; Sweet Potato and Chickpea Peanut Stew with Jollof Rice; a fabulous meat-free take on Pepper Pot Soup; Yam Fries with Scotch Bonnet Sauce or Chilli Jam, and there’s also a recipe for Mango Chilli Sauce I have my eye on. But the recipe I’m sharing with you today, because it would be an act of unspeakable cruelty not to, is for the Rum-Roasted Potatoes. The first recipe we tried was Pepper Steak, a rich, mouth-watering meal with a fiery kick that I just had to share with you!

Rasta Pumpkin Pasta was the first recipe we tried from this book, which I picked up because I'd seen it reviewed in the newspaper. This is an amazing introduction to plant- based Caribbean cooking and since I have never had authentic Caribbean food before - mainly because I have the chilli threshold of a toddler - I was SOOO excited to see this book. Other recipes we have tried and liked from this recipe book are; Jerk-spiced Lentil Bolognese (pictured below) Chicken Fried Rice, Da Jerk Burger, and Curry Prawns. A really refreshing and enjoyable cookbook that I would recommend to any Caribbean/spicy food lovers.Caribbean food makes for brilliant vegan dishes because it relies on fresh and vibrant fruit and veg, from plantain to pineapple. I think if you’re more familiar with Caribbean cooking this won’t be a problem for you, but if you aren’t, just be prepared for it. Think Potato and C hickpea Curry with Roti, Jerk C auliflower Wings, Coconut, Black-Eyed Pea and Sweet Potato Stew, and Plantain Cookies . In a large frying pan, heat some olive oil and the onion and garlic and cook down for 5-7 minutes over a medium-high heat until soft.
